In 2011 and 2012, almost 3,000 tonnes of maple syrup were stolen from the Strategic Reserve in Québec. But why is maple syrup such a desirable target for criminals? One reason is its high value. As demand for maple syrup increases, so does its price. A gallon of pure maple syrup can cost anywhere from $30 to $100, depending on the grade and region of production. This makes it an attractive item to steal and resell on the black market.

Another factor is the difficulty in tracing stolen syrup. Unlike other commodities, like gold or jewelry, maple syrup does not have unique identifying markings or serial numbers. This makes it challenging for authorities to track down and recover stolen syrup, making it an ideal target for food thieves.
